Russian garden sorrel

Rumex acetosa. A Russian variety of a well-known perennial salad green (hardy to zone 5). Does not bolt easily in the summer heat. Young leaves can be used raw or cooked, and can be frozen for later use. Flavour tangy, lemony-sour, and delicious, well-suited to spruce up a salad. Sorrel is one of the earliest salad greens and requires little to no care, aside from cutting back the seed stalks in the summer, to keep the plant focused on leaf production.
