Red-veined sorrel

Rumex sanguineus. Red-veined sorrel is also known as red sorrel, bloody sorrel, and bloody dock. A beautiful, perennial salad green, hardy to zone 5. Bright green leaves with deep-red stems and veins add a splash of colour and flavour to salads. Flavour is similar to regular sorrel - tangy, lemony-sour, and delicious. Plants are highly ornamental, growing to about 1 ft tall, and can be used in a flower border or a garden accent. Sorrel is one of the earliest salad greens and requires little to no care. The older leaves are tough, and so only young leaves are used for food.
