Mertensia maritima. The oysterleaf is named after its impressively surprising taste. The plant's succulent leaves smell and tastes like delicious, fresh seafood. Best used as a garnish, since (in our opinion) these could easily overpower a salad.
The oysterleaf is hardy to zone 2, tolerant of salt, thrives in gravel, and it's even native to Canada! A relative of the borage, its beautiful bluebell flowers are a pollinator magnet, and the plant stays in flower for quite some time.
