Elephant garlic is actually a cold-hardy leek that pretends to be a garlic, and does a great job of it! Its huge size and mellow garlic flavour make it a fantastic choice for any recipe.
Plant and treat it just like garlic – fall planting is great, but spring is also ok. Make sure to remove the garlic scapes for maximum bulb size (and eat them!). When harvesting, note the little bulbils at the bottom of the bulb – separate those out and plant them in the fall. They will grow what's called a "round" - a single clove, shaped like an onion. You can see in one of the pics that those, too, vary in size! The following year, planting the round will give you a full bulb
