Eastern redbud

Cercis canadensis. Native to Ontario and hardy to zone 4. This tree grows to 20-30 ft at maturity, producing a profusion of pink flowers early in the spring. The tree is a nitrogen fixer, which means that it generates fertilizer for your garden and is a good companion for nitrogen-hungry fruit trees. Makes a beautiful specimen tree in the garden!
The flowers and young seed pods are edible. The flowers can be used in salads, infused into vinegar, made into lemonade, baked into cookies, or cooked into a jelly. The young seedpods can be steamed, boiled, stir-fried, or pickled.
